Spirelli with veal and blue cheese sauce

Ingredients

For 4 persons

  • 500 g

  • 7 dl

    chicken stock

  • 400 g

    veal

  • 200 g

    mushrooms

  • 1

    onion

  • 50 g

    blue cheese

  • 1

    knob of butter

  • 4 tbsp

    cream

  • a few sprigs of parsley

  • salt and pepper

Preparation

  1. Dice the veal slices, slice the mushrooms and finely chop the onion.
  2. Melt the butter in a pan.
  3. Fry the onion and add the veal. Season with salt and pepper. Fry until the meat browns.
  4. Add the spirelli along with the chicken broth, stirring constantly until all the chicken broth is absorbed.
  5. Add the cream and crumble the blue cheese on top.
  6. Add the mushroom slices and stir for about three minutes.
  7. Divide the dish among four plates and finish with the parsley.
