Spicy pearl couscous with yoghurt-mint dressing

  • 300 g

  • 4 tbsp

    Greek yoghurt

  • 1/2

    clove of garlic

  • juice of 1/2 lemon

  • 1 tbsp

    olive oil

  • a few sprigs of parsley

  • a few sprigs of dill

  • a few sprigs of mint

  • 10

    sprigs of chives

  • 1/2 tsp

    cumin powder

  • 1 tsp

    paprika

  • freshly ground pepper and salt

Pearl Couscous Spelt

Preparation

  1. Cook the pearl couscous, drain and cool under cold running water.
  2. Finely chop the parsley, dill and chives. Mix the chopped herbs together with the paprika, cumin powder, pepper and salt into the pearl couscous.
  3. For the dressing:

  4. Crush the garlic, finely chop the mint
  5. Take 4 tablespoons of Greek yoghurt, season with salt and pepper.
  6. Mix with the lemon juice, olive oil, garlic and chopped mint.
  7. Serve the pearl couscous with the dressing, fresh lettuce and a nice piece of meat.
